Chocolate Chip Oatmeal Cookies

This is one of my most requested recipes. I can almost guarantee you will love it!

Chocochip cookies

1/4 cup unsweetened applesauce
1/4 coconut oil (melted)
1/4 cup maple syrup
1 tsp vanilla extract
1 organic egg or flax egg (1 tbsp flaxseed & 3 tbsp water, mix together in small bowl and let sit for 2-3 minutes)
1/4 cup organic coconut sugar (you can find it at IGA)
1/4-1/2 cup dark chocolate chips (try to find one with the least amount of ingredients)
1/2 tsp baking soda
1/2 tsp salt
3/4 cup rolled oats
1 cup oat flour (could use whichever flour you like)

1. Mix all ingredients together.
2. Place in fridge for 1 hour (yes this step matters!) It turns into a nice cookie dough-like batter.
3. Preheat oven to 350 degrees.
4. Bake for 15-17 minutes.

Blueberry Banana Walnut Muffins

Blueberry banana muffins

4 medium ripe bananas mashed
1/2 cup pure maple syrup
1/3 cup unsweetened vanilla
almond milk (plain works fine)
1 tsp apple cider vinegar (with the mother)
1 tsp pure vanilla extract
1 3/4 cup oat flour (ground oats in a blender)
2-3 tsp cinnamon
1/2 tsp sea salt
1 tsp baking soda
1 tsp baking powder
1 cup fresh blueberries (frozen would work)

1. Preheat oven to 400 degrees
2. Mix almond milk and apple cider vinegar and let sit for 3 minutes
3. Combine all wet ingredients including almond milk, apple cider vinegar mix.
4. Combine all dry ingredients
5. Add dry ingredients to the wet ingredients.
6. Stir in blueberries
7. Bake for 25 minutes

Makes 12 muffins

FFIT Peanut & Almond Butter Frozen Cookies

3/4 cup peanut & almond butter (I used half of each but you can use whichever you prefer, just make sure the only ingredients is either peanuts or almonds)
1/2 cup unsweetened almond milk
1 tbsp coconut oil melted (I pour a small amount of hot water into into a cup with the oil and let it melt)
2 tbsp pure maple syrup/raw honey
1 tsp vanilla extract
1 tsp cinnamon
1/4 – 1/2 cup mixed chopped nuts
1 tbsp flaxseed
1 tbsp chiaseed

1. Mix all ingredients together and shape into cookie shapes and freeze.
Feel free to add whichever nuts or seeds you like, even some coconut!

FFIT Peanut Butter Granola Bars

3/4 cup peanut/almond butter
Almost 1/2 cup pure maple syrup or raw honey
3/4 cup rolled oats
1 tbsp melted coconut oil
1 tbsp flaxseed
2 tbsp sunflower seeds
1-2 tbsp pumpkin seeds

PREHEAT OVEN TO 350 DEGREES
1. Add peanut butter, coconut oil and honey to a large bowl and mix well.

2. Add all of the other ingredients to bowl and mix until combined.

3. Shape into small bars and bake for 8-10 minutes. Make to let them cool for about 10-15 minutes before eating.

*You can add in any other ingredients you like (shredded coconut, chia, hemp, cacao nibs, dark chocolate chips)

Almond Butter Cookies

These are absolutely delicious! I did make a couple of changes, I used oat flour (ground oats in Vitamix) and pure maple syrup and natural almond butter (only ingredient is almonds).

Polka Dot Banana Bread

My favorite banana bread recipe!

Changes I made:

1) Used 1/2 cup of maple syrup

2) Used 2 cups of oat flour, that I made myself at home, instead of Spelt flour.

3) Used 2/3 cup almond milk due to the fact that I used oat flour

4) Doubled the baking powder because I used oat flour and it is more dense
