Good Morning Everyone!!
I know I promised to have a recipe to you yesterday, but this Mama was tired and hit the hay early, so I apologize! It is still definitely worth sharing, but before that, I want to get something off my chest. After I posted that picture of myself on my Facebook page yesterday with my bare belly showing, I got thinking “I hope NO ONE thinks I am doing this for attention”. The sole purpose of me posting pictures of the sort are to share my progress and journey with everyone. That’s what was always intended for “THEFFITLIFE”… to share my journey. I don’t do it for “Likes” or “comments”, I do it because I want to share my entire journey. It would be boring if I only shared pictures of myself before I got pregnant. I can honestly say, I feel just as beautiful with my belly as I do without it. I LOVE being pregnant, to think I am growing another human being is an overwhelming and amazing feeling. I must say the response I have received has been extremely positive, and for that I am thankful. Personally, I love when people who run fitness and health type pages post progress pictures of themselves. I don’t think they are self-absorbed or conceded, I think the reason the run their pages is to motivate others. My goal is to hopefully encourage others (with the go ahead from their doctor) that you can still be fit and healthy even during pregnancy, and if you are not pregnant, to hopefully encourage you to begin journey! Now that I got that off my chest I feel much better! I also really want to encourage you to share your journey with me, whether it be before and after photos or just a small write-up. Now for the good stuff! The other day I was craving (I know weird for a pregnant person ;)) carrot cake, so I set off in the kitchen to create something to help! Sometimes my muffins, especially lately, have been epic failures! But not this time! I waited for my husband to come home and give me his verdict, and he said they were “soooo good”! If they’re not, you can blame him for encouraging me to share this recipe ;). But they did hit the spot for this pregnant mama!
FFIT Carrot-Apple Power Muffins
2 cups oat flour
2 tsp baking soda
2 tsp cinnamon
1 tsp all spice
1/2 tsp salt
1/4 cup unsweetened shredded coconut (optional)
2 flaxseed eggs (2 tbsp flaxseed mixed into 6 tbsp filtered water, let sit for a minute or 2), could substitute with 2 eggs
2 tbsp chia seed (optional)
2 packets of stevia (don’t substitute for any artificial sweeteners, if you don’t have stevia, you could add more honey/agave)
2 tsp pure vanilla extract
1/4 cup raw organic honey (could use agave)
2 tbsp coconut oil
1 jar pureed organic carrot baby food
1/3 cup unsweetened applesauce
2 cups of grated carrots
2 small Granny Smith Apples (organic if possible) chopped into small pieces
PREHEAT OVEN TO 375 DEGREES
1. Place all of the dry ingredients into a bowl and combine well. Then add carrots and apples.
2. Place all of the wet ingredients in another bowl and mix well. Then add the wet ingredients to the dry ingredients and combine until they are mixed well.
3. Place batter into muffin tins and bake for approximately 26 minutes (every oven is different)
Yields 12 muffins.
