As you know I LOVE Christmas (and if you don’t, now you do :))! Mostly the concept of Christmas, getting together with family and enjoying one another’s company (usually ;)). I suppose I feel this way because I live so far away from my family, and don’t get to see them as often as I would like. The older I get, the more I realize it’s not about the presents, but more about the quality of family time, the laughs, and the wonderful memories made. It’s a time for traditions and making new traditions, and this year at my mom’s there’s going to be a few new traditions. Of course we are still going to have turkey and mashed potatoes, but there are a few new things on the menu! Christmas doesn’t have to be a time to let all of your eating habits fly out the window, you make small changes every year! If you are required to bring a dish, bring something delicious and healthy, that way you know you will have at least one healthy choice. Below I will share with you the new dishes my mom is introducing this year for Christmas dinner. I am beyond excited that she is making such an amazing effort to make such a healthy dinner :).
I know this seems like a lot of different “potato” dishes but she is going to make small amounts of each and see which one is best!
This year instead of steaming brussel sprouts, we are going to roast them!
