Yes, there is going to be another wedding in my family and this time it is going to be my brothers! I am so happy for him and his new Fiance. My husband and I also get the chance to stand up for them on their wedding day, yay! This also means I better keep myself (and my husband ;)) in shape!
Another exciting thing, well not nearly as exciting as a wedding, but I have a new recipe for you! I know I promised it earlier this week, but this week brought unforeseen circumstances (such as a truck coming through the front window of my work place ;)), so now that things are somewhat under control, I have my normal schedule back. I made the most delicious muffins on Wednesday and wanted to share them with you before some of my Lloyd Lake desserts. These muffins are the perfect breakfast or power snack when you need an energy boost. I took this picture just moments before I ate the very last muffin this afternoon, I could barely get the picture taken and that muffin in my mouth!
Almond Butter Power Muffins
3/4 cup almond butter (can use peanut butter)
1 tsp vanilla extract
1/4 cup natural honey
1/4 cup unsweetened applesauce
1/4 cup almond milk
1 1/2 cup rolled oats
2 tbsp chia seeds
1/4 chopped almonds
2 tsp cinnamon
1 tsp baking soda
2 scoops vanilla protein (can use any flavor you like)
PREHEAT OVEN TO 350 DEGREES
1. Combine all of the wet ingredients except the almond milk, and mix until well combined.
2. Add all of the dry ingredients to the wet ingredients except for the rolled oats and mix well.
3. Add rolled oats and almond milk to the muffin batter and combine until mixed.
4. Bake for 15-20 minutes. I bake for 15 minutes because I like my muffins a little chewy and think they taste best cold (weird I know ;)).

I was thinking about trying hot yoga. Have any of you tried hot yoga or just yoga period, and what are your thoughts on it?
