I hope everyone had a fantastic week and are ready to enjoy a weekend full of warm weather and hopefully a couple of bbq’s. Since I am working tomorrow, I decided to bbq both lunch and supper today. It was also quite toasty outside, and didn’t want to turn my oven on ;). Here is what I cooked for both meals (with the exception of sweet potato for supper)
1. Chicken with Sriracha & Amazing Dad’s BBQ Sauce
2. Asparagus, tossed in olive oil & Mrs. Dash
3. Mushrooms, tossed in olive oil and wrapped in tin foil
4. Kale, also tossed in olive oil
5. Yam tossed in 1 tbsp of coconut oil and cinnamon
It was an amazing lunch that was simple and delicious!
If you are wondering what I am doing blogging on a Friday night. Well the main reason is that I work in the a.m., and I also don’t function well with a lack of sleep (I need sleep not only for myself, but the well-being of others ;)). I don’t often stay up late anymore, because my husband and I wake up early to get our workouts in before our days begin. No matter what our days have in store for us, when we workout it is “our” time. We don’t have head phones in, instead we push each other through that last rep and encourage each other to push through. As much as I love working out, sometimes you need a kick in the ass to get yourself to the gym, and he is more than willing to do that for me ;). I look forward to every single workout together, and am glad I have a workout partner as dedicated as me. If you are wanting to start going to the gym, but the task of doing it alone is daunting, enlist a workout partner. Either it be your significant other, friend, a family member, or even, wait for it…..your dog! Seriously, your dog needs exercise too, and there is no one more loyal than your canine friend. They are always willing, rain or shine, so if you have a pet, take them for a walk/run and get some exercise together!
But if you are not a hermit like me (which I am totally okay with being ;)) and are heading camping this weekend or even going out on the town tonight, do not throw all your caution to the wind. This may be the only time I say, moderation is not overrated. Go and enjoy a couple of drinks and maybe a (small) piece of garlic toast, but you don’t need to drink 10 jaguar bombs and eat an entire loaf of garlic toast and unravel all your hard work. But I suppose that is just my opinion, and I guess opinions are like assholes, everybody’s got one ;). But since this is where I come to be honest and share my thoughts, it is better to write it here than share it elsewhere ;).
On a less serious note, I have a simple and delicious recipe to share with you, and guess what? I created it (as far as I know ;)). Don’t you hate when you think you have this awesome invention and then realize 100 other people invented the same thing? Anyways, my creation was a clean Apple Crisp/Crumble. Here goes…
1 cup rolled oats
3 scoops vanilla protein
2-3 tbsp honey
1 tbsp coconut oil (I am sure you could use olive oil instead)
2 granny smith apples
PREHEAT OVEN TO 350 degrees
1. Place all dry ingredients in a medium bowl and mix.
2. Place honey and coconut oil in a microwave safe bowl and microwave until the ingredients have melted
3. Chop granny smith apples into small chunks and place in an 8×8 pyrex dish.
4. Mix the dry ingredients, honey and coconut oil together and place on top of apples.
5. Bake for 20-25 minutes
It is easy, quick and tastes delicious! Plus you don’t have to worry about having one or two or three extra spoonfuls ;).
