Pumpkin Patch


Good Evening!

I sincerely apologize for my absence, it has been 4 whole days since I have posted, but trust me I have a valid excuse! For the last 4 days my husband and I were visiting our family. Our days were filled with delicious breakfasts, killer workouts, golf, amazing family dinners and some much-needed quality time with our families. But no matter how many days we go home for, it is never long enough to get to do everything we want. Being as busy as I was, I got a chance to bake some of my favorite recipes for our families, and they couldn’t have gone over better! Needless to say, there aren’t any leftovers!

My mom and dad have also begun their journey into clean eating, so it is so wonderful for me to able to eat the way I do everyday when I go home. Even though my Mom usually has everything I need before I get there, she always calls me before we arrive to make sure there isn’t anything else I need.  She’s the best! It is so nice to have such supportive family and also friends, it makes my lifestyle so much easier!

I am going to share one of the recipes I made while I was visiting. I had made it only once before I brought it to one of our family dinners, and everyone seemed to enjoy it, so I thought it might be time to share it!

Pumpkin Protein Bars

1/2 Cup Pumpkin Puree (100% Pumpkin)

1/2 Cup Almond or Peanut Butter

2 Cups Rolled Oats

2-3 Scoops of Natural Vanilla Whey

1/4 Cup Natural Honey

2 tbsp Chia seeds

2 tbsp Flaxseed

1. Mix all ingredients in a large bowl. You may need to add some Almond milk for a smoother consistency.

2. Place batter into a 7 x 11 Pyrex dish. You can use a smaller/larger dish, depending on the size of bar you want.

3. Place dish into the freezer. Once the bars are frozen, they are ready to eat. If you have placed them in the freezer for a long period of time, you may want to take them out 5-10 minutes before eating. Enjoy!

*You can add any other seeds/nuts you like to these bars.

Back to reality tomorrow, and that means I have crossfit in the a.m. I am so happy I found something worth getting up a 5:45 am for!
