And a beautiful afternoon it is here. I apologize for such a long absence, but my parents were up visiting this weekend for my Birthday! We had such a great weekend, we did a little bit of relaxing, went for a beautiful walk at the farm and enjoyed some vino (you have got to indulge some days)! It was so nice to get outside, get some exercise, fresh air and sunshine. It is amazing how good a little sunlight can make you feel.
My birthday was great, and I got some wonderful gifts. My husband bought me a new pairs of runners and a couple of new workout tops that I love, and can’t wait to try them out! I will take pictures and share later. I also made some Birthday Brownies for my parents and they were a hit, I don’t even think they lasted a whole day. They are definitely a must try.
Before my parents left today, we decided to try the Chopped Leaf in Grande Prairie. I had the Whole Bowl 2, and added chicken, shrimp and avocado. It was one of the most amazing meals I have ever eaten (next time I will get the sauce on the side). They have great fresh food, salads, wraps, soups, sandwiches, omelets and granola bars to name a few. I seriously cannot say enough good things about this place. It is nice to have a place to eat where I can actually get something quick and healthy to eat.
Anyways…..since today is Sunday, and I know it can be a lazy day where you don’t feel like cooking, or just want to make something quick. So I thought I would share a great recipe, especially if you love pasta. It is simple and delicious. It is one of my favorite clean eating meals, and since Monday is right around the corner, why don’t you start your upcoming week clean!
