Thinking of Summer…..


I know this post may be a bit early in the season, but I thought I would share my favorite BBQ sauce with you since I just had BBQ chicken last night for dinner. Due to our fantastic winter you can give this stuff a shot before summer even arrives. Anyways…this amazing BBQ sauce is called Amazing Dad’s Original  BBQ sauce ( it’s organic), and it is made in the Peace Country (so you can support a local company). Just use the sauce in moderation as it is made with honey and contains a fair amount of sugar, but there is nothing wrong with treating yourself! Last night was hard for me to think of something to make for supper (which hasn’t happened to me in a really long time). I had to think of something to accompany my chicken (I don’t think I will ever get sick of chicken), so I decided on roasted brussel sprouts, zucchini, mushrooms and kale. They tasted amazing, and because I am not super keen on steamed brussel sprouts this is a great way to consume such a nutritious vegetable. Here is how to make roasted vegetables (you can use any vegetable you like, you may just have to change the cooking time)
Vegetable Medley

1 Zucchini

1 Package of  sliced mushrooms (I was too lazy to slice them myself)

As many brussel sprouts as you would like

1 Bundle of Kale

1) Preheat oven to 400 degrees

2) Wash all vegetables.

3) Slice zucchini into small slices

4) Cut each brussel sprout in half

5) Toss all vegetables in 1-2 tbsp of olive oil and any salt-free spices (I use any flavor of Mrs. Dash which can be found is most grocery stores).

6) Place on baking sheet and cook for 12-20 minutes, being sure to flip over half way through.
