Good morning everyone!
I am not exactly sure why I chose Superbowl Sunday as my title for this post because I don’t watch football, but it might be because there are MILLIONS of people who will be today. So I thought in the spirit of the Superbowl I would share some snacks worthy of being mentioned.
After staying out late for a friends birthday party last night, I feel great today. It actually felt good to sleep in and not have to wake up to an alarm clock. Breakfast was a bit behind schedule, but needless to say it is my favorite meal of the day and I never skip it. If you are wondering what was for breakfast today, I am kind of boring when it comes to switching it up in the morning, so it was protein pancakes again today.

Blueberry Protein Pancakes
1/2 cup rolled oats
1/2 cup egg whites
1/4 cup unsweetened applesauce
1 tsp baking powder
1 tbsp flaxseed
1 tbsp wheat germ
Cinnamon (as much as you like)
1/2 cup blueberries
- Blend all ingredients except the blueberries in a blender.
- Pour batter into pan and cook like regular pancakes, once they are finished remove from pan. I love cinnamon so I sprinkle a little bit more on top of my pancakes after they are cooked.
- Heat blueberries in the pan until they are hot and soft so they make a kind of blueberry jam as a topping for my pancakes. You can also add the blueberries into the pancakes after you have poured the batter into the pan if you prefer it that way instead.
